Good Morning Casserole!


Looking for an easy, fun, and healthy meal to start off your mornings? This breakfast casserole is one of the easiest and most tasteful to make. The casserole makes a lot so its also a great thing to bring to a morning pot luck, tea with the girls, or your boyfriends parents house to make a good impression ;]. 

Ingredients:

12 Large Eggs
2 Bell Peppers
1 stock green onions
1 yellow onions
1/2 stock of parsley
1 1/2 cup graded cheese
1 pound of frozen pork sausage meat

All of these Ingredients except the 12 eggs are interchangeable. If you don't like port, you can use turkey sausage, and any kind of cheese works, just pic your favorite. 

Preheat Oven 350 degrees
First start by cooking the sausage on the skillet. Keep the temp on low, so you can leave it cooking while you start dicing up all of your vegetables. Crack all 12 eggs into a large bowl. Whisk together and add salt and pepper to taste. Your meat should be ground up to little pieces and cooked thoroughly. Once its cooked thru, turn off the stove and drain the juice. Add all of the vegetables and 1 cup of cheese into the whisked eggs. Now add all of the meat. Mix all ingredients together and pour into a large glass baking dish. Make sure the dish has been sprayed with Pam first. Sprinkle the remaining 1/2 cup of cheese on the top. Place in the oven and cook 15-20 minutes, depending on your oven. Check the casserole after 15 min and give the dish a little wiggle and if the eggs seem to jiggle leave it in until its firm.  Let it sit for 10 minutes to cool before you eat it, and if your saving it for an event the next day put plastic wrap over it and place it into the fridge, it is good served chilled or hot.
